These aren't quite the real, live, heavenly thing but they're not quite as inconvenient either. If you're looking to make something like oyster Rockefeller, then this is a wonderfully easy way to do it. Or slip these into a fish pie or a steak and kidney pudding. The species is Pacific oyster, normally from a South Korean oyster farm. Just remember that these do not include a shell!
